Raw Thin Mint Cookies with Olive Leaf Complex Recipe

COOKIE:
3 Tbsp cacao powder
1 c coconut flour
10-12 dates, soaked until soft
2 Tbsp water
TOPPING:
1/4  c chocolate chips
1 Tbsp Barlean's Organic Virgin Coconut Oil

We've got a perfect way for you to kick off the holiday season: Our friends @thefreshslice came up with this amazingly delicious recipe for raw thin mints that will blow your mind. What makes these so special? They're packed with antioxidants from Olive leaf Complex, which includes 95mgs of Oleuropein per serving, to help support a healthy, well-functioning immune system. These are just the tasty immune system boost you need as we barrel head-first into the holidays and winter months.

Instructions: 

  1. Combine cookie ingredients in a food processor and pulse until dough forms.
  2. Roll out the dough to 1/4 inch thick.
  3. Place in freezer to set for 15 minutes.
  4. Use a cookie cutter to cut out your cookies and return the cookies to the freezer.
  5. While cookies are in the freezer, melt together the chocolate chips and coconut oil and then stir in the Olive Leaf Complex.
  6. Dip your cookies in the topping mixture, freeze to set and enjoy!
