Whipped Acorn Squash & Yams With Flax Oil

  • 2 large acorn squash, halved

  • 2 large or 4 medium yams

1/2 c fresh orange juice

1 Tbsp maple syrup

  • 3 Tbsp Barlean's Clear Organic Flax Oil

  • Cinnamon to taste (1/8 - 1/4 tsp)
  • Grated nutmeg to taste (1/8 - 1/4 tsp)
  • Fresh rosemary, sage and/or thyme for garnish

SERVES 6

INSTRUCTIONS:

  1. Preheat oven to 425° F, pierce yams with fork and bake the squash and yams 45 minutes to one hour or until tender.
  2. Scoop out the squash from the skins and place in a large mixing bowl or food processor.
  3. Remove the yam flesh and add to the squash.
  4. Add the orange juice, maple syrup, flax oil and spices.
  5. Whip or mash together and top with fresh herbs.
