Hello, everyone! Here is another great recipe from Ivy Larson at www.HotAndHealthyLiving.com for a delicious raw coconut, carrot and ginger soup.
1/4-inch piece ginger root (no need to peel)
1 orange bell pepper
2 Tbsp lime juice
1/4 c raw cashews
1 c mango
1 c water
1 tsp raw honey
2 Tbsp extra virgin coconut oil (such asBarlean’s)
Sea salt, to taste
Raw, unsweetened, unsulphered shredded coconut, for garnish
1. Place all ingredients in a high speed blender or food processor. Process until smooth and creamy. Place soup in a covered container and chill for several hours before serving. Sprinkle shredded coconut on top just before serving. Serve cold. Enjoy!
