RAW Coconut, Carrot & Ginger Soup Recipe by Ivy Larson

Hello, everyone! Here is another great recipe from Ivy Larson at www.HotAndHealthyLiving.com for a delicious raw coconut, carrot and ginger soup.

Ingredients:

  • 1/4-inch piece ginger root (no need to peel)
  • 1 orange bell pepper
  • 4 carrots
  • 2 Tbsp lime juice
  • 1/4 c raw cashews
  • 1 c mango
  • 1 c water
  • 1 tsp raw honey
  • 2 Tbsp extra virgin coconut oil (such as Barlean’s)
  • Sea salt, to taste
  • Raw, unsweetened, unsulphered shredded coconut, for garnish

1. Place all ingredients in a high speed blender or food processor. Process until smooth and creamy. Place soup in a covered container and chill for several hours before serving. Sprinkle shredded coconut on top just before serving. Serve cold.
