Keeping Santa healthier this year with butter flavored coconut oil.

Looking to enjoy all the holiday treats while still supporting that healthy lifestyle? Us, too. Sugar cookies and Christmas time seem to go hand in hand. That got us looking into ways we could still enjoy a perfectly crisp sugar cookie with frosting piled on top. We found a simple and delicious gluten free recipe over at Bob's Red Mill. We love using their flours in our recipes.  Here's the link to their recipe.

 

We made few changes to the recipe in an attempt to make it a bit healthier. Instead of using butter, we substituted it with our Butter Flavored Coconut Oil. It's a 1:1 substitution and the cookies turned out wonderful.

 

In addition, we took out a 1/4 cup of the gluten-free flour and added in a 1/4 cup of our Antioxidant Super Seed Blend.

 

We couldn't have a sugar cookie without frosting, so we opted to make a vegan frosting. All you need is a chilled can of coconut cream and all-natural food coloring. Whip it up and start frosting the cookies. To top it off, we sprinkled some of the Antioxidant Super Seed Blend on top.

 

We recommend frosting the cookies right before serving, as the coconut cream will start to melt in warmer temperatures.
