Brunch is never really complete without waffles. Our good friends over at Stonyfield Yogurt have an easy-to-make waffle recipe with Greek yogurt that we love! We changed up a few items* and topped the steaming hot waffles with our new butter flavored coconut oil, maple syrup and fresh blueberries. The end result? A forkful of brunch heaven and quite a few health benefits from the coconut oil.
Coconut oil has MCTs (medium chain triglycerides), which are a form of a saturated fat. The good news about MCTs is that they are converted into energy in the body instead of fat AND they provide numerous health benefits like a healthy heart and brain. On top of that, it also has lauric acid and caprylic acid (both MCTs), which are converted into monolaurin. Monolaurin has been studied for its anti-bacterial, anti-fungal and anti-viral properties. All you have to do is enjoy a tablespoon of this coconut oil buttery goodness on your waffles and let the MCTs do the rest.
*Instead of two cups of all-purpose flour, we did 1 ½ cups of flour with ½ cup of our Flax Chia Coconut. It's a little something extra to enhance the overall healthiness of the waffles.
