Anyone else share our love for muffins? You can't beat a hot cup of coffee with a healthy and delicious muffin in the morning.
Today we decided to infuse our muffins with chia seeds. Chia seeds come packed with essential nutrients like protein, fiber, iron and Omega-3s. We love to power-up our recipes with these incredible tiny superseeds.
Here is the full recipe:
1 cup of whole wheat flour
3/4 cup of Barlean's Flax-Chia-Coconut
1/3 cup of organic light brown sugar
1/2 tsp of salt
1 tbsp of baking powder
1 cup of greek yogurt
4 tbsp of Barlean's coconut oil
2 large eggs
2 tbsp of lemon zest
2-4 drops of lemon essential oils
1 tsp of vanilla
1 tsp of almond extract
1 can of chilled coconut cream. (Whip together with an electric hand mixer for maximum fluffiness).
Mix together dry and wet ingredients separately, then slowly combine while stirring. Place batter into muffin holders. Bake for 12-13 minutes at 400 degrees. We frosted the muffins and sprinkled with chia seeds and lemon zest. Best served right out of the oven.
